Blueberry muffins

Blueberry muffins are delicious! I found a good recipe and thought, let me make this with whole wheat flour! It was good, better than I expected.  Here's the recipe I used: Savory Bites - Blueberry Muffins
I substituted half of the all purpose flour with whole wheat flour and added orange zest (from half an orange).  The cooking time is less than the above recipe called for, so after 8-9 minutes, I checked them every 1.5 - 2 minutes until the toothpick came out clean.
So - would I do it again? Yes...The muffins were definitely tasty but a bit more dense.  However, I will try it once using only all-purpose flour, just to see the difference :)

Chocolate Mousse...with a twist

Chocolate mousse is one of the best creations...EVER.  I've been wanting to make it for a while now but the ingredients are very discouraging: heavy cream, 6-8 eggs, sugar, chocolate, etc..Ah!  When a craving comes along, I go to Whole Foods and get my fix...UNTIL NOW.  This chocolate mousse recipe is delicious, easy, and much lower in fat and calories!  Do NOT let the first ingredient discourage you  :) 

Ingredients:
16 oz. silken tofu (1 package)
4.8 oz. semi-sweet or dark chocolate (50-60% cocoa)
1/3 cup cocoa powder
1/3 cup water
3/4 cup sugar
1/8 tsp cinnamon

1. Puree tofu in blender until smooth
2. In a double broiler, melt remaining ingredients until smooth
3. Add chocolate mix with tofu and blend well

 Let it set in containers or tartlet shells for 2-3 hours (see pictures below), garnish with fresh fruit or chocolate shavings.  (PS: Tartlet shells = store brought, bakery aisle)

Flourless Chocolate Cake

I'm obsessed...with chocolate!  A couple of Sundays ago, I was reading the Parade magazine and saw a recipe for an easy Flourless Chocolate Cake recipe.  I knew I had to try it.

Ingredients: 
7 ounces of dark chocolate (50-60%)
1 cup sugar
1/2 cup butter (1 stick)
4 eggs

Ingredients






Melt the butter and chocolate in a double broiler

 Separate the 4 eggs.  Add half of the sugar to the egg yolks.  Then add this mix to the melted chocolate (make sure to temper the eggs before pouring all of it in the chocolate - scrambled eggs in this would not taste good)
Beat the egg whites and slowly add in the remainder of the sugar until stiff peaks form
Fold the chocolate into the egg whites then pour into a greased 9" cake pan and bake at 350 degrees for approximately 40 minutes
 Ta-daa! Serve with powdered sugar, fruit, whip cream...whatever pleases your taste buds!

Might I add, it's hard to bake and take pictures of the food!
